Our guest of today is Athena Loizides, a Greek Cypriot television presenter, cookbook author and food writer, specialising in Cypriot and Greek cuisine. Athena is going to show you how to cook vegan coconut cookies, a very easy and healthy recipe, with only 152 calories per cookie. The recipe contains no milk, no eggs and butter, 100% vegan.

Here are the info you need to make these delicious vegan and low calorie cookies recipe: To make 12 cookies: 50 g coconut oil 120 g whole-wheat flour 100 g oats 120 g brown sugar 85 ml coconut milk, KOKO 1 teaspoon baking soda 1 teaspoon cinnamon 100 g rinsed and chopped preserved fruits (here we used bergamot) Method: 1. Preheat oven to 200 degrees, fan assisted. Line a baking tray with baking paper or use a non stick cookie pan. 2. Place all the ingredients except the chopped preserved fruit in the food processor. Beat until you have a ball of dough. 3. Transfer the dough in a bowl and mix in the fruit. Using an ice cream scoop, scoop out the dough in balls and line on the baking tray. Bake for 10 minutes.
