Leek and Pumpkin Soup. 100% Vegan.

Today our guest is making a vegan leaks and pumpkin soup. French people cooks this soup often. It's a light dish and it's easy to prepare. It's also a prefect dish for your Halloween party!

Leeks contain anti-oxidants, minerals, and vitamins that have proven health benefits.
Leeks are low in calories.
It also has anti-bacterial, anti-viral and anti-fungal activities.
Additionally, leeks are a good sources of vitamin-A. They also have some other vitamins such as vitamin C, K, and vitamin E. Vitamin C helps to develop resistance against infectious agents .

Pumpkins are very low calorie vegetables. It is rich in dietary fiber, anti-oxidants, minerals, vitamins. It is usually recommended to fight cholesterol and lose weight.
It is also good for the skin and improves the eye sight.

For this recipe you will need:
Olive oil, salt and pepper, 1 garlic clove, 1 leek, 1 pumpkin, 1 potato, 1 onion and parsley. Watch the video to know how to cook the leeks and pumpkin soup.

Important note: If you don't use a pressure cooker, let the vegetables cook in the water for 1 hour.
