Chicken Tagine With Lemon and Olives Recipe | Moroccan food
How to make a chicken tagine with lemon and olives (Recipe), one of the best food in Morocco.
A classic that is truly found everywhere in Morocco (Moroccan food), this dish combines the tang of preserved lemons with the salinity of olives. If you can't find preserved lemons, you can substitute lemon zest, ideally zest that has been blanched two or three times to remove its bitterness.
Tagine recipe: 1/2 teaspoon of pepper 1/2 preserved lemon without the skin 1 teaspoon of ginger 1 teaspoon of turmeric 1 teaspoon of salt (according to taste) half a cup of chopped cilandro (coriander) 1 fine chopped onion 2-3 garlic gloves a pinch of saffron olive oil optional the juice of half a lemon.
Mix all the ingredients together in a salad bowl, then marinate for minimum one hour.
Add olive oil to the tagine and on medium heat cook the chicken on both sides until golden brown. Add a ½ -1 glass of water depending on the size of the tajine, add half a cup of olives put it on low heat and let it cook for 1.5h.
Don't be tempted to open the lid while it's cooking because you might lose lots of flavors and tenderness. Serve immediately with crusty bread. Bon appetit!
