How to make a fresh and healthy vegan chickpeas recipe

Have you ever wondered what you can do with chickpeas?


Chickpea is a key ingredient in hummus and can be ground into flour and made into falafel. It is also used in salads, soups and stews. The chickpea is important in Indian and Middle Eastern cuisine.


In this article we will show you how to make a fresh, healthy and easy vegan recipe using chickpeas.

The spices and herbs we use make this recipe a super healthy dish for your friends and family.



My French Dietitian chickpeas vegan recipe

Here is what you'll need to cook the chickpeas salad:


- 1 small piece of fresh ginger (or one tea spoon of ginger powder)

- 1 garlic clove (or one tea spoon of garlic powder)

- 1 tea spoon of Paprika

- 1 tea spoon of cumin powder

- some fresh coriander leaves (cilantro)

- half a lemon

- 2 table spoons of virgin olive oil

- salt and pepper

- 250g of chickpeas (dry or canned)


The recipe is for 2 persons.

Time needed: from 10 min to 2.5 hours depending on the peas you use.





Step one

The first step will depend on what type of chickpeas you use.


If you use canned chickpeas, you don't need to cook them. Just open the can and dry the chickpeas for a few minutes.



If you use dried chickpeas, they need a long cooking time (2.5 hours). If soaked for 12–24 hours before use, cooking time can be shortened by around 30 minutes. Chickpeas can also be pressure cooked or sous vide cooked at 90 °C (194 °F).


For this recipe we used dried chickpeas that we first soaked overnight, then we boiled them twice. First time for 40 min, second time for about 1h30 (we started with cold water).

Once your chickpeas are ready, place them in a strainer to remove the excess water and put aside.


Step two

In a salad bowl, add the olive oil, lemon juice, paprika, cumin, salt and pepper.

Cut your coriander leaves, ginger and garlic very thinly and add them to the bowl.

Stir with a fork.


Step three

Add the chickpeas to the salad bowl and stir again with a fork.


It's ready! You can eat it warm or cold.


Optional (for the non vegans)

We decided to add canned tuna at the end. It works perfectly.
