Our home made Ratatouille (Recipe)

- 5 tomatoes

- 2 eggplants

- 1 red bell pepper
- 1 zucchini
- 2 onions
- 1 garlic clove
- Some thyme, rosemary and bay leaves

- 3 tbsp of olive oil

- Salt and pepper


Learn how to prepare the French ratatouille, the famous French recipe.




Dice the eggplants and zucchini, salt.
Peel and slice the onions.
Cut the bell pepper into large pieces (seed them and remove the white membrane).
Dice the tomatoes (I peel them first but it’s up to you).

Peel and chop the garlic finely.
Make sure you remove the germ.

Reserve each of the vegetables in a separate container. The cooking of the vegetables for the ratatouille is done in a very precise order.


Heat the oil in a sauté pan, then sweat the onions with a pinch of salt.

Add eggplants and peppers, season again with fine salt and cook over medium heat for 5 min.


Add zucchini and salt, then cook over medium heat for 5 min.


Then add garlic, thyme, bay leaves, rosemary, then the tomatoes.

Let simmer over low heat and cover for 30 minutes.

Note: it is possible to add black pitted olives if you like.
